Easter means many things to me: spring, pastels, and family fun. The best place for a special Easter is in your home. As a child, the Easter Bunny would hide small candy eggs or M&M’s around the downstairs of our home. My brother, sister, and I would grab our (already loaded) Easter baskets and run around the house like maniacs hunting for our Easter treasures left behind by the bunny with a fluffy tail.
That may sound like a terrible time to parents of young children or grandparents of young grandkids, but what made it special was family tradition. We expected it every year—even as teenagers! This year, try something different. Set some new family traditions that will create memories that will last a lifetime. Asparagus and Ramp Quiche
Preheat oven to 375 degrees. Bring a medium pot of salted water to a boil. Blanch the asparagus for 2 minutes, and then immerse in ice water to stop cooking. Chop the spears into thirds and set aside.
In a medium skillet heat the butter over medium-high heat. Add the ramps and saute for 8 minutes, until they are tender and quite fragrant. Add the asparagus, salt, and pepper, and saute for 2 more minutes.
Meanwhile, beat the eggs and milk in a medium bowl. Add the sauteed vegetables, and stir. Add 3 tablespoons of Pecorino and stir. Place the quiche shell onto a rimmed baking sheet, gently pour the egg mixture into the shell, and sprinkle the top with the remaining cheese. Bake for 25 minutes, or just until the quiche has set up.
